Directions
- Place all the ingredients in a mixing bowl.
- Mix well until fully incorporated.
- Divide the mixture into the muffin tin tray.
- Bake in the preheated oven for 15 minutes at 375 degrees Fahrenheit.
- Remove from the oven and transfer to a serving plate.

- Season with salt and ground black pepper to taste.
- Add a splash of lemon juice and mix well.

Black Bean Tomato Curry

- ½ cup sweet onions, sliced

- ½ tsp cayenne pepper
- ½ cup vegetable broth
- 1 ½ cup tomato sauce
- ¼ tsp salt
- ¼ tsp ground black pepper
Directions
- Pour oil in a heated skillet over medium heat.
- Add quinoa, sweet onions, and minced garlic; saute for 2 minutes.
- Then add the black beans, cumin, turmeric powder, and cayenne pepper; continue sauteing for another minute.
- Pour the vegetable broth and tomato sauce.
- Bring the mixture to a boil and reduce to a simmer for 10 minutes.
- Season with salt and ground black pepper to taste.
- Transfer to serving bowls and serve immediately.
