Ingredients

  • 1 long English cucumber, peeled, quartered and cubed
  • 1 avocado, cubed
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped (or mint)
  • 2 handfuls baby arugula or spring mix
  • 1 lemon, zested
  • 1 teaspoon Sriracha (optional - for a bit of a spicy kick)
  • 2 teaspoons extra virgin olive oil
  • 2 tablespoons vegan basil pesto
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
