Bailey’s Irish Cream Cheesecake

Bailey’s Irish Cream Cheesecake is a decadent and luxurious dessert that combines the creamy texture of cheesecake with the rich, coffee and whiskey flavors of Bailey’s Irish Cream. This dessert is perfect for special occasions, holidays, or any time you want to treat yourself to something special. Here’s how to make Bailey’s Irish Cream Cheesecake:

Ingredients

  • - For the Crust
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • - For the Filling
  • 24 ounces (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 3/4 cup Bailey's Irish Cream
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • - For the Topping (optional)
  • 1 cup sour cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings or cocoa powder for garnish
  • Whipped cream for garnish

Instructions

Preparing the Crust

Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.

Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl until well mixed. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.

Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
Making the Filling

Reduce the oven temperature to 325°F (160°C).

In a large bowl, beat the cream cheese, sugar, and flour together until smooth and creamy. Add the Bailey's Irish Cream and vanilla extract, and mix well.

Add the eggs, one at a time, mixing on low speed after each addition just until blended. Be careful not to overmix.

Pour the filling over the prepared crust in the springform pan.

Bake for 55-60 minutes, or until the center is almost set but still slightly jiggly. The edges should be set.
Adding the Topping (optional)

Mix the sour cream, sugar, and vanilla extract together in a small bowl. Carefully spread over the top of the cheesecake.

Return the cheesecake to the oven and bake for an additional 10 minutes.
Cooling and Garnishing

Remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan. This helps to prevent cracking as it cools.

Allow the cheesecake to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

Before serving, garnish with chocolate shavings, cocoa powder, and/or whipped cream if desired.
