Ingredients

  • 4 ounces chicken thighs, chopped
  • 1/3 cup raw cashew nuts
  • 1 tablespoon peanut oil
  • 1/2 teaspoon soy sauce (use gluten free tamari for gluten free)
  • 1/2 teaspoon oyster sauce
  • 1/2 large carrot, quartered and cubed
  • 1 stalk celery, halved and cubed or (5 asparagus spears (thick end only) chopped)
  • 1 clove garlic, minced
  • 1 teaspoon mined ginger
  • 3-4 scallions, chopped
  • 2 tablespoons water
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
