Cottage Pie with Kale & Cauliflower Mash

This delicious cottage pie recipe is so easy to make and it tastes fantastic. It’s topped with a scrummy kale and cauliflower mash that’s bursting with nutrition and full of comforting flavours.

Cottage Pie with Kale & Cauliflower Mash

Ingredients

  • 500g/17.5oz lean beef mince
  • 1 cauliflower
  • 15g/0.5oz kale
  • 2 carrots
  • 2 leeks
  • 100g/3.5oz chestnut mushrooms
  • 1/2 red onion
  • 100ml/3.5fl oz almond milk, unsweetened
  • 1 garlic clove, crushed
  • 1 tsp. nutmeg
  • Fresh coriander to garnish

Directions

  1. Chop the cauliflower, then place in a pan of boiling water. Simmer over a medium heat for 15 minutes (until softened). Meanwhile, place the mince and all the other veggies in a frying pan. Cook over a medium heat until the mince has cooked and the veggies have softened.
  2. Drain the cauliflower, then add to a food processor with the kale, almond milk and nutmeg. Place the mince mixture in a baking dish and top with the kale and cauliflower mash.
  3. Grill for 10 minutes. Garnish with fresh coriander.
