Creamy Chicken Soup Recipe

  • 1 Tablespoon unsalted butter
  • 1/2 teaspoon oregano
  • 3/4 cup chopped onion
  • 7 cups chicken broth
  • 1/2 teaspoon Salt
  • 1 teaspoon fresh thyme
  • 4 cups uncooked wide egg noodles
  • 1/4 cup all purpose flour
  • 1 cup fat free half-and-half or whole milk
  • 1 cup sliced celery
  • 2 garlic cloves minced
  • 1 cup sliced carrots
  • 1/2 teaspoon Fresh ground pepper
  • 1 medium potato peeled and diced
  • 2 cups shredded roasted chicken


  1. Heat the butter in a large pot over medium heat.
  2. Add garlic, celery, onions and garlic and sauté for a good 5 minutes.
  3. Now add pepper, salt, oregano and thyme and sauté well.
  4. To the pot, add chicken broth and potatoes. Bring it to a boil, cover the pot and let it simmer in medium heat for about 25 minutes.
  5. At this point, add the noodles, half-and-half and the chicken. Cook for another 7-8 minutes. Taste the soup for seasoning.
  6. Serve warm.
