In my house, when it’s time for some Quesadilla action, I love to make them with a variety of vegetables and spices–you know, a unique spin on your typical boring, meat and cheese Quesadilla. Sure your kids may love a simple cheese Quesadilla (EVERY night of the week), but for more adult flairs, basic quesadillas may prove underwhelming! Don’t be afraid to experiment with a an assortment of ingredients, and combinations to make your quesadillas as tasty as you like!
Although Quesadillas are a no-brainer, the cheesy, greasy after-mess they leave behind can be a little frustrating! You know, scrubbing the cooked on cheese, soaking your pans, so instead of browning my tortillas in butter I used Pam Cooking Spray and the clean up was a breeze! For these quesadillas, I added a large red onion, and a few garlic cloves to my turkey meat, also the perfect amount of curry, cumin, and turmeric to kick the flavors up a notch! I also added baby bella mushrooms, and black beans and these were not only delicious, but just two quesadillas filled me up! Feel free to add whatever your favorite cheese is–I used a little Mexican cheese blend for flavor. Enjoy!
