  • 3-4 tablespoons ice cold water
  • Filling:
  • 1 1/4 cups sugar
  • 1/3 cup cornstarch
  • 1/2 cup freshly squeezed meyer lemon juice
  • 1/2 cup mandarin orange juice or regular orange if you can't find mandarin
  • 1 cup water
  • 4 egg yolks beaten
  • zest of 1 meyer lemon
  • 2 tablespoons butter salted
  • Meringue:
  • 4 egg whites
  • 1/4 teaspoon cream of tarta
  • 1/2 cup sugar
