Quinoa Salad with Roasted Butternut Squash and Pumpkin Honey Mustard Vinaigrette

This quinoa salad recipe is very tasty with a nutty flavor from the toasted quinoa, sweetness from the Pumpkin Honey Mustard and just a hint of tartness from the dried cranberry. Roasting the butternut squash caramelizes it, bringing out its true sweetness. This recipe is in my “Easy 1-2-3” Collection.
