Roasted Garlic and Cauliflower Soup Vicky Berman

  • 1 tablespoon flour (use gluten free flour for gluten free version)
  • 2 1/2 tablespoons olive oil
  • 1 head of garlic
  • 1 head of cauliflower
  • 2-3 stalks celery, chopped
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1/2 cup dry white wine
  • 1/2 cup water
  • 3 cups vegetable broth
  • 3/4 cup sour cream (use coconut milk for vegan version)
  • salt, pepper
