 For instance, I’m always starving after my workouts–many times craving more than just a smoothie. But what do I usually end up having? A smoothie. And why? Because it’s fast and easy. Well now I have these Johnsonville® chicken breasts (which are also fast and easy) to fill me up. Each chicken breast has 18+ grams of protein, and are ready in 2 minutes after microwaving. You can also cook them on the stove, or in the oven if you’re feeling fancy. And not only are these all natural chicken breasts fully prepared for you, they come in a variety of flavors and seasonings. So there are literally hundreds of creative recipes you can come up with!

For this dish I decided to use the Southwestern Chicken Breasts–other flavors include: Garlic & Herb, Black Pepper & Sea Salt, Teriyaki and Honey Mustard. I eat spinach on the daily, so I used that as my greens, and also quinoa for fiber and added nutrients. For the dressing I made a light chili lime dressing (It is SO good!)–so this is basically a chicken burrito bowl but a salad LOL. The salad turned out great! The Johnsonville® chicken was really juicy and flavorful! When I tell you that everything came together perfectly to create this great salad, believe it! And no, there were no leftovers 🙂

Southwestern Chicken Spinach and Quinoa Salad WholeYum
  • 5-10 minutes
  • 4 Servings
  • 1 cals


  • Johnsonville® Southwestern Flame Grilled Chicken Breasts
  • 6 Cups Fresh Spinach
  • 1 Can Corn
  • 1 Can Black Beans
  • 2 Cup Cooked Quinoa
  • 2 Chopped Tomatos
  • 2 Chopped Avocado
  • Feta Cheese (Optional not pictured)
  • 1/2 Cup Cilantro ( and more to garnish)
  • 1/3 Cup Extra Virgin Olive Oil
  • 1/2 Teaspoon Chili Powder
  • 1/4 Teaspoon Minced Garlic
  • 2 Limes (juiced)
  • 1/4 Cup Honey
  • 1 Chopped Red Onion
  • Dash of salt
  • Dash of pepper


  1. Preheat skilled on medium heat with 1 teaspoon olive oil
  2. Add onion and cooked down for 3-5 minutes.
  3. Add Johnsonville® Chicken packets to the pan. Heat on one side for 4 minutes then flip and heat the other side for 4 minutes. Remove from fire.
  4. For the salad dressing add remaining olive oil, lime juice, chili powder, salt, pepper, honey, garlic and cilantro to a food processor. Pulse for 1 minute and use a fine mesh strainer to strain cilantro residue.
  5. On a bed of spinach add chicken and onions, corn, black beans, tomatoes, avocado, cooked quinoa (follow package instructions for 2 cups), and feta cheese (optional).
  6. Drizzle salad dressing over contents and enjoy!
