Sweet Potato Flatbread Breakfast Pizza

Ingredients

  • For the Flatbread:
  • 1 3/4 Cups Bread Flour
  • 3/4 Cups Water
  • 1 Teaspoon Coarse Salt
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Olive Oil + More for Brushing
  • Toppings:
  • 2 Sweet Potatoes
  • 2 Tablespoons Quality Pesto Sauce
  • 1 Teaspoon Garlic Paste
  • 2 Cups Arugula
  • 2-3 Eggs
  • 1/2 Small Red Onion
  • Salt and Pepper to Taste
  • Olive Oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Peel and cut sweet potatoes into 1 inch cubes.
  3. In a large skillet add 1 tablespoon olive oil to the sweet potatoes.
  4. Roast potatoes in the oven for 35-40 minutes until brown and crisp stirring ever 7-10 minutes.
  5. Chop onion and place in the skillet with potatoes after 20 minutes.
  6. Remove potatoes once done and preheat oven to 425 degrees.
  7. Prepare flatbread by combining flour, water, oil, baking powder, and salt until dough appears.
  8. Transfer to floured surface and roll into a circle.
  9. Once dough is rolled out brush with olive oil and spread pesto and garlic paste on the dough.
  10. Place in the oven for 10 minutes.
  11. Meanwhile fry two eggs.
  12. Check flatbread for hardened, browning appearance.
  13. Add arugula, sweet potatoes, onion, fried eggs, and top with salt and pepper.
  14. Bake pizza for another 5-7 minutes.
  15. Once done, top with feta.
