Ingredients:

  • 1 cup unsweetened almond milk
  • 1 tbsp almond butter
  • ¼ cup old fashioned rolled oats
  • ½ ripe banana, frozen
  • ½ cup strawberries, frozen
  • ¼ cup ice cubes
  • 1 tbsp maple syrup
  • ¼ tsp grated ginger
  • 2 tbsp chia seeds 

Directions

  1. Place all the ingredients (except for chia seeds) blend until smooth.
  2. Pour the mixture into a tall serving glass.
  3. Sprinkle with chia seeds.
  4. Serve immediately.

Lunch

Asian-Style Roasted Florets & Black Beans

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Total Time: 25 minutes

Ingredients:

  • 2 tbsp olive oil
  • ¼ cup sweet onions diced
  • 2 garlic cloves, sliced
  • 8 oz frozen broccoli florets, thawed
  • 4 oz frozen cauliflower florets, thawed
  • 6 oz canned black beans, drained
  • ½ tsp ground cumin
  • ¼ tsp turmeric powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 lemon, juiced

Directions

  1. Toss all the ingredients in a roasting pan.
  2. Roast the vegetables in a preheated oven for 15 minutes at 400 degrees Fahrenheit.
  3. Remove from the oven and mix well.
  4. Transfer to a serving plate and serve immediately.

Cranberry Quinoa Salad

Ingredients:

  • 1 cup cooked quinoa
  • ½ cup dried cranberries
  • 1 English cucumber, diced
  • 6 oz canned chickpeas, drained
  • 1 red bell pepper, finely diced
  • ½ cup red onions, minced
  • ¼ tsp cayenne pepper
  • ¼ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 1 lemon, juiced
  • 2 tbsp olive oil

Directions

  1. Combine olive oil, lemon juice, salt, and ground black pepper in a mason jar. Mix well until thoroughly combined.
  2. Toss the remaining ingredients in a serving bowl.
  3. Pour the dressing over and mix well.
  4. Serve immediately.

Snack

Fiery Hot Roasted Chickpeas

  • 12 oz canned chickpeas, drained
  • 2 tbsp olive oil
  • 1 tbsp cayenne pepper
  • ½ lemon, juiced
  • ¼ tsp salt

Directions

  1. Toss the chickpeas, olive oil, and cayenne pepper in a roasting pan.
  2. Roast in the oven for 15 minutes at 425 degrees Fahrenheit.
  3. Transfer to a serving bowl and season with salt.
  4. Add a splash of lemon juice and mix well.
  5. Serve immediately.
