Creamy Keto Cauliflower Mash
- 12 oz frozen cauliflower florets, thawed
- 1/3 cup unsalted butter
- 2 tbsp sour cream
- 4 garlic cloves, peeled
- 1/4 cup grated parmesan cheese
- 2 tbsp grated cheddar cheese
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- ¼ tsp smoked paprika
Place the cauliflower florets and garlic in a heavy-bottomed pot; cover with cold water.
Bring the mixture to a boil and reduce to simmer for 13 minutes.
Remove and drain excess water.
Place the florets and the garlic in a food processor.
Add in the remaining ingredients and blend until smooth.
Season with salt and ground black pepper to taste.
Transfer to a serving platter and enjoy.
