Crock pot BBQ chicken with quinoa recipe

Enjoy this flavorful crockpot BBQ chicken with quinoa! It’s a wholesome and easy meal that’s packed with protein and delicious BBQ flavors.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup BBQ sauce (choose a brand with no added sugars or make your own Paleo-friendly version)
  • 1/4 cup low-sodium chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked quinoa
  • Optional toppings: sliced green onions, chopped cilantro

Instructions

Place the chicken breasts at the bottom of the crockpot.

In a small bowl, whisk together the BBQ sauce, chicken broth, minced garlic, smoked paprika, onion powder, salt, and black pepper.

Pour the BBQ sauce mixture over the chicken breasts in the crockpot, making sure they are well coated.

Cover the crockpot and cook on low heat for 4-6 hours or until the chicken is tender and easily shreds.

Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and mix it with the BBQ sauce.

Rinse the quinoa under cold water to remove any bitterness.

Add the rinsed quinoa to the crockpot with the shredded BBQ chicken. Stir everything together.

Cover the crockpot again and cook on low heat for an additional 1-2 hours, or until the quinoa is cooked and has absorbed the flavors.
