- 3 cups crispy rice cereal
- 1 cup rolled oats
- 1/2 cup almond butter or peanut butter
- 1/2 cup honey or maple syrup
- 1/4 cup mini chocolate chips or dried fruit (optional)
- 1/4 cup chopped nuts (optional)
- 1 teaspoon vanilla extract
- Pinch of salt
In a large mixing bowl, combine the crispy rice cereal and rolled oats. Set aside.
In a small saucepan, heat the almond butter (or peanut butter) and honey (or maple syrup) over low heat. Stir until the mixture is well combined and slightly melted. Add the vanilla extract and salt, and stir again.
Pour the almond butter (or peanut butter) mixture over the crispy rice cereal and rolled oats. Mix well until all the ingredients are evenly coated.
If desired, add mini chocolate chips, dried fruit, or chopped nuts to the mixture. Stir until they are evenly distributed.
Line a baking dish or pan with parchment paper or lightly grease it with cooking spray. Transfer the mixture into the pan and press it down firmly to form an even layer.
