Gingerbread Cake

Gingerbread cake is a delicious dessert perfect for the holiday season, with its warm spices and rich flavors. Here’s a recipe for a classic gingerbread cake!

Ingredients

  • For the Cake:
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light or dark, based on your preference)
  • 2 large eggs
  • 1 cup unsulphured molasses
  • 1 cup hot water
  • For the Cream Cheese Frosting (Optional):
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch square cake pan or a 9-inch round cake pan.

Whisk the flour, ginger, cinnamon, cloves, nutmeg, baking powder, baking soda, and salt in a medium-sized bowl. Set this dry mixture aside.

In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

Stir in the unsulphured molasses until well combined.

Gradually add the dry mixture to the wet mixture, alternating with the hot water, beginning and ending with the dry ingredients. Mix until the batter is smooth and well combined.

Pour the gingerbread cake batter into the prepared cake pan.

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.

Remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

While the cake is cooling, you can prepare the cream cheese frosting (if desired). In a mixing bowl, beat the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

Once the cake is completely cool, frost it with the cream cheese. You can also dust it with powdered sugar for a simple finish.
