Gingerbread Truffles

Gingerbread truffles are a delightful holiday treat that combines gingerbread’s warm and spicy flavors with the creamy richness of truffles. Here’s a recipe to make these delicious gingerbread truffles!

Ingredients

  • For the Gingerbread Filling:
  • 2 cups gingerbread cookies (homemade or store-bought), finely crushed
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon vanilla extract
  • For the Coating:
  • 8 ounces (about 1 1/2 cups) semi-sweet chocolate, chopped
  • 1 tablespoon vegetable oil
  • Crushed gingerbread cookies or powdered sugar for dusting (optional)

Instructions

In a food processor, pulse the gingerbread cookies until they are finely crushed and resemble breadcrumbs.

Combine the crushed gingerbread cookies, softened cream cheese, powdered sugar, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and vanilla extract in a mixing bowl. Mix until all the ingredients are well combined and a dough forms.

Roll the gingerbread dough into small, bite-sized balls about 1 inch in diameter. Place them on a parchment paper-lined baking sheet.

Place the baking sheet with the gingerbread balls in the freezer for about 30 minutes to firm them up.

While the gingerbread balls are chilling, prepare the chocolate coating. In a microwave-safe bowl, combine the chopped semi-sweet chocolate and vegetable oil. Microwave in 20-30-second intervals, stirring between intervals until the chocolate is completely melted and smooth.

Remove the gingerbread balls from the freezer. Using a fork or a dipping tool, dip each ball into the melted chocolate, making sure it's fully coated. Allow any excess chocolate to drip off.

Place the chocolate-coated gingerbread truffles onto the parchment paper-lined baking sheet.

If desired, sprinkle crushed gingerbread cookies or powdered sugar on top of each truffle while the chocolate is still wet for decoration.

Allow the chocolate coating to set by letting the truffles sit at room temperature or in the refrigerator for about 30 minutes.
