  • 2 ripe avocados, halved and pitted
  • 4 eggs
  • 1/2 cup fresh tomatoes, diced
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Optional: Fresh parsley or chives for garnish
