Healthy Avocado Boats with Egg and Lemon Drizzle

These Avocado Boats are a wholesome, low-carb meal packed with healthy fats and protein. With creamy avocado, perfectly cooked egg, juicy diced tomatoes, and a light drizzle of olive oil and lemon juice, this dish is as nutritious as it is delicious. Ingredients
- 2 ripe avocados, halved and pitted
- 4 eggs
- 1/2 cup fresh tomatoes, diced
- 1 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- Optional: Fresh parsley or chives for garnish

Instructions
Preheat your oven to 375°F (190°C).
Scoop out a small amount of flesh from each avocado half to create a larger cavity for the egg.
Place the avocado halves on a baking dish, using foil to stabilize them if needed. Carefully crack one egg into each avocado cavity.
Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still slightly runny (or cooked to your desired doneness).
While the avocados bake, mix the diced tomatoes with a drizzle of olive oil, lemon juice, sea salt, and black pepper in a small bowl.
