Herb Rack of Lamb
Ingredients
- 4 garlic cloves
- 2 tbsp dried rosemary
- 2 tbsp dried thyme
- 1 tsp dried oregano
- 1 tsp dried basil
- 3/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 cup unsalted butter, softened
- 8 rib Frenched racks of lamb
- 1 grapefruit, cut into wedges
Instructions

Place garlic cloves, dried rosemary, dried thyme, dried oregano, dried basil, salt, ground black pepper, and unsalted butter in a food processor.

Blend until smooth.

Place the rack of lamb on a rimmed baking sheet and rub with the herbed butter.

Let it rest for 15 minutes at room temperature.

Roast the lamb in a preheated oven at 450 degrees Fahrenheit for 35 minutes.

Remove from the oven and cover everything with tin foil for 10 minutes.

Carve and transfer to a serving plate.

Serve with grapefruit wedges.
