Made with ground beef, fresh broccoli, and cauliflower rice, it’s a quick and easy dinner option that’s perfect for meal prep or a busy weeknight. With bold flavors and wholesome ingredients, this dish is satisfying and healthy!
Ingredients
- 1 lb ground beef (lean or extra lean)
- 2 cups fresh broccoli florets
- 2 cups cauliflower rice
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp soy sauce (or coconut aminos for gluten-free/paleo)
- 1 tbsp sesame oil (optional, for added flavor)
- 1 tsp red chili flakes (optional, for heat)
- 1/2 tsp black pepper
- Optional Garnishes: Sliced green onions, sesame seeds
Instructions
Chop the broccoli into bite-sized florets and dice the onion. If using pre-packaged cauliflower rice, ensure it’s thawed and drained if frozen.
Heat a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Remove excess grease if necessary and season with black pepper.
Push the beef to one side of the skillet and add the onion, garlic, and ginger. Sauté for 1-2 minutes until fragrant. Add the broccoli florets and stir everything together.
Add the cauliflower rice to the skillet. Stir-fry for 3-4 minutes, allowing the cauliflower rice to absorb the flavors.
Add soy sauce (or coconut aminos) and sesame oil, stirring well to coat the ingredients evenly. Sprinkle red chili flakes for heat if desired.
Divide the stir-fry into bowls and garnish with sliced green onions and sesame seeds for extra flavor.
