Honey mustard chicken stir fry

Enjoy this flavorful honey mustard chicken stir fry! The combination of sweet and tangy flavors with tender chicken and crunchy vegetables makes for a delicious and satisfying meal.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • Optional garnish: sliced green onions, sesame seeds

Instructions

In a small bowl, whisk together the honey, Dijon mustard, soy sauce, rice vinegar, and ground ginger. Set aside.

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Add the chicken pieces to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the sliced red and yellow bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for about 4-5 minutes, or until the vegetables are crisp-tender.

Return the cooked chicken to the skillet with the vegetables.

Pour the honey mustard sauce over the chicken and vegetables. Stir everything together to coat the chicken and vegetables evenly with the sauce. Continue cooking for an additional 2-3 minutes until the sauce has thickened slightly.

Remove from heat and let it rest for a minute.

Serve the honey mustard chicken stir fry over steamed rice or noodles. Garnish with sliced green onions and sesame seeds, if desired.
