Cook the bacon in a large pot over medium heat until it's crispy. Remove the bacon from the pot and set it aside, leaving the bacon grease in the pot.

Add the chopped onion to the pot with the bacon grease and cook until it's soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the diced potatoes to the pot, along with the chicken or vegetable broth. If you're using thyme, add it now. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the potatoes are tender.

If you don't have an immersion blender, you can carefully transfer some of the soup to a blender to puree, then return it to the pot.
