Juicy Grilled Lemon Herb Chicken

This Grilled Chicken with Lemon Herb Marinade is a fresh and flavorful dish perfect for any meal. Infused with zesty lemon and aromatic herbs, the chicken is juicy, tender, and bursting with flavor. This easy-to-make recipe is ideal for summer barbecues, meal prepping, or a healthy weeknight dinner.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional Garnish: Lemon wedges, Fresh parsley sprigs

Instructions

In a small bowl, whisk together olive oil, lemon juice, garlic, parsley, thyme, oregano, paprika, salt, and pepper.

Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are evenly coated. Cover and refrigerate for at least 30 minutes (up to 4 hours for best results).

Heat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grill grates to prevent sticking.

Remove the chicken from the marinade and let excess marinate drip off. Place the chicken on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).

Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with fresh parsley and lemon wedges, if desired.
