Ingredients

  • 1 lb ground beef (80% lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes (no added sugar)
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste

Instructions

Sauté the Vegetables:

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, garlic, and bell pepper, and sauté for 3-4 minutes until the vegetables are softened.

Cook the Ground Beef

Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.

Add the Spices

Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and pepper. Cook for 1-2 minutes until the spices are fragrant.

Simmer to Chili

Add the diced tomatoes, tomato paste, and beef broth to the pot. Stir to combine. Bring the mixture to a simmer, then reduce the heat to low. Cover and let the chili simmer for 20-25 minutes, stirring occasionally.

Taste the chili and adjust the seasoning as needed. If you prefer a thicker chili, let it simmer uncovered for an additional 5-10 minutes.
