Ingredients
- FOR THE GRILLED SHRIMP SKEWERS
- 16 large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp chili powder (optional)
- salt and black pepper to taste
- FOR THE AVOCADO MANGO SALSA
- 1 ripe avocado, diced
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1 tbsp fresh cilantro, chopped
- juice of 1 lime
- salt and pepper to taste

Instructions
In a medium bowl, combine shrimp, olive oil, paprika, garlic powder, onion powder, chili powder (if using), salt, and pepper. Toss to coat evenly. Let it marinate for 15 to 20 minutes.
In another bowl, mix diced avocados, mango, red onion, cilantro, and lime juice. Gently toss to combine without mashing the avocado. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
Preheat your grill or grill pan to medium-high heat. Thread the marinated shrimp onto skewers (4 shrimp per skewer). Grill for 2-3 minutes on each side until the shrimp turn pink and are slightly charred.
