Keto-Friendly Lasagna is a low-carb twist on the classic Italian dish, designed to fit into a ketogenic lifestyle without sacrificing flavor. Instead of traditional pasta, this lasagna uses layers of thinly sliced zucchini or eggplant combined with a rich meat sauce and creamy cheese layers. It’s a hearty, comforting meal that satisfies your cravings while keeping your carb intake in check.

Ingredients

  • 2 medium zucchinis or 1 large eggplant, thinly sliced lengthwise
  • 1 lb ground beef
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups keto-friendly tomato sauce (low-sugar)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

Preheat Oven:

Preheat your oven to 375°F (190°C).

Prepare the Zucchini or Eggplant:

Slice the zucchini or eggplant lengthwise into thin strips. Lay the strips on a baking sheet and sprinkle with salt. Let them sit for 10 minutes to draw out excess moisture, then pat dry with paper towels.

Cook the Meat Sauce:

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent. Add the ground beef, breaking it up as it cooks. Once browned, drain any excess fat. Stir in the tomato sauce, oregano, basil, salt, and pepper. Let simmer for 5-10 minutes.

Assemble the Lasagna:

In a baking dish, spread a thin layer of the meat sauce. Layer with slices of zucchini or eggplant, followed by dollops of ricotta cheese and a sprinkle of mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a generous layer of mozzarella and Parmesan cheese on top.

Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
