Ingredients

  • 1/2 cup key lime juice (freshly squeezed if possible, but bottled works too)
  • 2 teaspoons key lime zest (or regular lime zest if key limes are unavailable)
  • 1 cup heavy cream
  • - For the Graham Cracker Layer:
  • 1 1/2 cups graham cracker crumbs (from about 12 graham crackers)
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • - For the Whipped Cream:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Prepare the Lime Filling:

In a medium bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest until well combined. The acidity of the lime juice will naturally thicken the condensed milk as it sits.

In a separate bowl, beat 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the lime mixture until no white streaks remain. Set aside.
Prepare the Graham Cracker Layer:

In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until the crumbs are evenly moistened.

Reserve about 1/4 cup of the crumb mixture for garnish, and divide the remaining crumbs among the serving glasses, pressing lightly to form a crust layer.
Prepare the Whipped Cream:

In a clean bowl, beat the remaining 1 cup of heavy cream with powdered sugar and vanilla extract until stiff peaks form. Set aside some whipped cream for topping the parfaits, and fold the rest into the lime filling mixture if desired for a lighter texture.
Assemble the Parfaits:

Spoon or pipe a layer of the lime filling over the graham cracker base in each glass.
