  • 2 pounds (about 900g) small potatoes (such as baby potatoes or fingerling potatoes), halved or quartered depending on size

  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh herbs, finely chopped (such as rosemary, thyme, and parsley)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
