Low-Carb Pistachio-Crusted Salmon Recipe

This Pistachio-Crusted Salmon is a flavorful, nutritious dish that combines the rich, buttery texture of salmon with the crunch and nuttiness of roasted pistachios. With a hint of herbs and zesty lemon, this recipe is perfect for a quick weeknight dinner or an elegant dinner party. Plus, it’s low-carb, packed with protein, and full of heart-healthy fats!

Ingredients

  • 4 salmon filets (6 oz each)
  • 1 cup pistachios, shelled and finely chopped
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley or dill, finely chopped
  • Salt and pepper to taste
  • Lemon wedges, for serving
