Roasted Butternut Squash Hummus
- 4 garlic cloves
- 6 oz canned chickpeas, drained
- 14 oz butternut squash, peeled and diced
- 1 tbsp sesame seeds
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 lemon, juiced
- 1 tbsp maple syrup
- 2 tbsp olive oil
Place the butternut squash in a roasting pan.
Drizzle with olive oil and season with salt.
Roast in the oven for 20 minutes at 400 degrees Fahrenheit.
Remove and place the roasted butternut squash in a food processor together with the remaining ingredients.
Process until smooth.
Season with salt and ground black pepper to taste.
Transfer to a serving bowl and serve immediately.
