Shrimp, Garlic, Butter, Lemon Juice

Shrimp Scampi is a classic Italian-American dish that’s quick, easy, and bursting with flavor. Juicy shrimp are sautéed in a garlic and butter sauce, then brightened with lemon juice and parsley for a deliciously simple meal. Served over pasta, zucchini noodles, or on its own, this dish is perfect for a weeknight dinner or a special occasion.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (or chicken broth)
  • 1 tbsp lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • OPTIONAL: Cooked pasta or Zucchini noodles for serving

Prepare the Shrimp

Pat the shrimp dry with a paper towel and season with salt and pepper.

Cook the Shrimp

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp to the skillet and cook for 2-3 minutes on each side, until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Make the Scampi Sauce

In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant. Pour in the white wine (or chicken broth) and lemon juice, and bring the mixture to a simmer. Let it cook for 2-3 minutes until the sauce slightly reduces.

Combine and Serve

Return the cooked shrimp to the skillet, tossing them in the sauce to coat. Cook for an additional minute to warm the shrimp through. Stir in the chopped parsley. Serve immediately over pasta or zucchini noodles, with extra lemon wedges on the side if desired.
