A Spring Vegetable Frittata is a bright and flavorful dish that celebrates the fresh produce of the season. It’s a versatile meal that can be served for breakfast, brunch, or even a light dinner. Frittatas are easy to make, and you can customize them with whatever vegetables you have on hand. Here’s a recipe that highlights spring vegetables like asparagus, peas, and green onions.

Ingredients

  • 8 large eggs
  • 1/3 cup (80ml) whole milk or heavy cream
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons (30ml) olive oil
  • 1 cup (100g) asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup (75g) fresh or frozen peas
  • 1/2 cup (75g) cherry tomatoes, halved
  • 4 green onions, thinly sliced
  • 1/2 cup (50g) grated Parmesan cheese or any cheese you prefer
  • 2 tablespoons fresh herbs (such as parsley, dill, or chives), chopped, for garnish
  • Additional salt and pepper for seasoning the vegetables

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). This will allow you to finish cooking the frittata in the oven to achieve a fluffy and evenly cooked texture.

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk (or heavy cream), salt, and pepper until well combined and slightly frothy. Set aside.
Sauté the Vegetables:

In a 10-inch ovenproof skillet or cast-iron pan, heat the olive oil over medium heat. Add the asparagus pieces and a pinch of salt, and sauté for about 3-4 minutes until they start to soften.

Add the peas, cherry tomatoes, and green onions to the skillet. Cook for another 2-3 minutes until the vegetables are just tender but still vibrant and crisp.
Add the Egg Mixture:

Reduce the heat to low and pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle the grated Parmesan cheese evenly over the top.

Cook on the stovetop for 3-4 minutes, allowing the edges to start setting.
Bake the Frittata:

Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the frittata is set and the top is lightly golden.
