- For the Topping:
- - 2 cups mixed berries (such as strawberries, blueberries, raspberries, and blackberries)
- - 1/4 cup (60ml) apricot jam (for glazing, optional)
Instructions
Crust:

In a food processor, combine the flour, butter, sugar, and salt. Process until the mixture resembles coarse crumbs.

Add the egg yolk and 1 tablespoon of cold water. Pulse until the dough starts to come together, adding more water as needed.

Turn the dough out onto a lightly floured surface and knead briefly until smooth. Flatten into a disk, wrap in plastic, and chill for at least 30 minutes.

Preheat your oven to 375°F (190°C). Roll out the dough to fit a 9-inch tart pan with a removable bottom. Press the dough into the pan and trim the edges.
