Ingredients
- 2 ribeye or sirloin steaks (about 6-8 oz each)
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil, divided
- 3 cloves garlic, minced
- 1 tsp dried thyme or rosemary
- Salt and pepper to taste
- OPTIONAL: 1 tbsp balsamic vinegar for drizzling
Instructions
Preheat your oven to 400°F (200°C).
Season the steaks generously with salt, pepper, and dried thyme or rosemary.
Heat 1 tbsp of olive oil in a large oven-proof skillet over medium-high heat. Once hot, add the steaks and sear for 2-3 minutes per side, or until a golden-brown crust forms.
While the steaks are searing, toss the asparagus with the remaining 1 tbsp olive oil, minced garlic, salt, and pepper. Spread the asparagus on a baking sheet.
Transfer the skillet with the steaks to the preheated oven and place the baking sheet with asparagus in the oven as well. Roast the asparagus for 10-12 minutes until tender and slightly crispy. Cook the steaks for 6-8 minutes, or until they reach your desired level of doneness.
Remove the steaks and asparagus from the oven. Let the steaks rest for a few minutes before slicing. Optionally, drizzle the steaks with balsamic vinegar before serving. Serve hot with the roasted asparagus on the side.
