Valentine’s Day Chocolate Cupcakes with icing

Ingredients

  • For the Cupcakes
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder

  • 2-3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Red food coloring (optional, for pink icing)
  • Valentine's Day sprinkles (optional, for decoration)

Instructions

For the Chocolate Cupcakes

Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the buttermilk, vegetable oil, egg, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.

Slowly pour in the boiling water while stirring the batter. The batter will be thin, but that's okay.

Fill each cupcake liner about 2/3 full with the batter.

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
For the Icing

In a mixing bowl, beat the softened butter until creamy.

Sift in the powdered sugar and cocoa powder and mix until well combined.

Add milk and vanilla extract, and continue to beat until the icing reaches your desired consistency. If you want pink icing, you can add a few drops of red food coloring at this point and mix until you achieve the desired color.
Assembly

Once the cupcakes are completely cool, pipe or spread the icing onto each cupcake.
