Vegan Mixed Berry Delight with Coconut Whip

This refreshing and healthy dessert features a medley of fresh mixed berries topped with light, fluffy whipped cream made from coconut milk. It’s vegan, dairy-free, and perfect for summer days, dinner parties, or a quick sweet treat that’s as nutritious as it is delicious!

Ingredients

  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 1 can full-fat coconut milk, chilled overnight
  • 1 tsp vanilla extract
  • 1-2 tbsp maple syrup, agave, or keto sweetener (optional, adjust to taste)

Instructions

Prepare the Coconut Whipped Cream

Chill the can of coconut milk overnight to allow the cream to separate from the liquid. Open the can and scoop the thick coconut cream into a mixing bowl (save the liquid for smoothies). Add vanilla extract and sweetener (if using). Beat with a hand mixer or whisk until light and fluffy (2-3 minutes).

Rinse and dry the mixed berries. If using strawberries, hull and slice them into smaller pieces.

Divide the berries into serving bowls or glasses. Top with a generous dollop of coconut whipped cream.
