- 4 medium zucchini
- 1 cup ricotta cheese

Slice the zucchini lengthwise into thin strips, about 1/4 inch thick. You can use a mandoline slicer or a sharp knife for this step. If the zucchini slices are too wide, you can cut them in half crosswise.
