Zucchini lasagna rolls

Enjoy these zucchini lasagna rolls! They are packed with flavor and a great way to incorporate vegetables into your meal.

Ingredients

  • 4 medium zucchini
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or olive oil and set aside.

Slice the zucchini lengthwise into thin strips, about 1/4 inch thick. You can use a mandoline slicer or a sharp knife for this step. If the zucchini slices are too wide, you can cut them in half crosswise.

In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, egg, dried basil, dried oregano, salt, and pepper. Stir well to combine.

Lay out the zucchini slices on a flat surface. Spread a spoonful of the ricotta mixture onto each zucchini slice, covering the entire surface.

Starting from one end, roll up each zucchini slice tightly and place it seam-side down in the prepared baking dish.

Repeat the process with the remaining zucchini slices and ricotta mixture until all the ingredients are used.

Pour the marinara sauce evenly over the zucchini rolls in the baking dish. Sprinkle the shredded mozzarella cheese on top.

Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Remove the zucchini lasagna rolls from the oven and let them cool for a few minutes. Garnish with fresh basil leaves, if desired.

Serve the zucchini lasagna rolls warm as a main dish or a side dish. They make a delicious and healthier alternative to traditional lasagna.
