Sweet Potato Flatbread Breakfast Pizza


  • For the Flatbread:
  • 1 3/4 Cups Bread Flour
  • 3/4 Cups Water
  • 1 Teaspoon Coarse Salt
  • 1 Teaspoon Baking Powder
  • 1 Tablespoon Olive Oil + More for Brushing
  • Toppings:
  • 2 Sweet Potatoes
  • 2 Tablespoons Quality Pesto Sauce
  • 1 Teaspoon Garlic Paste
  • 2 Cups Arugula
  • 2-3 Eggs
  • 1/2 Small Red Onion
  • Salt and Pepper to Taste
  • Olive Oil


  1. Preheat oven to 400 degrees.
  2. Peel and cut sweet potatoes into 1 inch cubes.
  3. In a large skillet add 1 tablespoon olive oil to the sweet potatoes.
  4. Roast potatoes in the oven for 35-40 minutes until brown and crisp stirring ever 7-10 minutes.
  5. Chop onion and place in the skillet with potatoes after 20 minutes.
  6. Remove potatoes once done and preheat oven to 425 degrees.
  7. Prepare flatbread by combining flour, water, oil, baking powder, and salt until dough appears.
  8. Transfer to floured surface and roll into a circle.
  9. Once dough is rolled out brush with olive oil and spread pesto and garlic paste on the dough.
  10. Place in the oven for 10 minutes.
  11. Meanwhile fry two eggs.
  12. Check flatbread for hardened, browning appearance.
  13. Add arugula, sweet potatoes, onion, fried eggs, and top with salt and pepper.
  14. Bake pizza for another 5-7 minutes.
  15. Once done, top with feta.

The thing about food blogging is no one gets to eat until you’re done with your photos.  And of course that was the case this morning when I made these Ricotta Cornmeal Pancakes.  I mean trust me, I get annoyed too when I have to reheat my food after a “photoshoot”–and I REALLY get lost in the moment.

So all this morning I had to hear my hubby’s mouth about not getting to eat a hot breakfast, and that “they are getting cold”, and by the time I asked him to hold my camera while I fixed my setup he was BEYOND annoyed (although he helped me out anyway).  I’m saying all this to say that food blogging ain’t easy–between ticked off husband’s, cold food, recipe mistakes, and hungry insects–most people just don’t get it.  But I know you get it (rant over).  Anyway let’s talk pancakes!

Ricotta Cornmeal Pancakes

One of my favorite breakfast spots in ATL serves ricotta cheese pancakes.  I’ve been eating there every weekend, and  I have no clue how they make them, but they are always SO light.  I love them.  This morning I wanted to make ricotta pancakes myself, yet with cornmeal mix and that’s exactly what I did.  The results?  Very good, not so light because cornmeal is a bit heavy, but delicious anyway.  They are a tad bit grainy but in a good way as I LOVE cornbread and it’s grainy texture.  My dry mix consisted of cornmeal, salt, flour, baking powder, and a little buckwheat pancake mix.  The Ricotta in this is noticeable, but not overbearing.  Please enjoy!

Ricotta Cornmeal Flapjacks

Prep Time: 5 minutes

Cook Time: 3 minutes

Total Time: 8 minutes

Yield: 8-10 Pancakes

Serving Size: 3 Pancakes


  • 1/2 Cup Ricotta Cheese
  • 1/2 Cup Cornmeal Mix (I used Bob's Red Mill)
  • 1/2 Cup Buckwheat Pancake Mix (I used Arrowhead Mills)
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Brown Sugar (Your preference)
  • 1/4 Teaspoon Baking Powder
  • 1/2 Teaspoon Flour
  • 3 Eggs
  • 1 Cup Milk (Start with 1 cup and add more for thinner pancakes)


  1. Heat a pan on medium low heat with butter.
  2. Mix all dry ingredients.
  3. Mix all wet ingredients and add to dry mixture--mixing until well blended.
  4. Pour 3-4 Tablespoons of pancake mix in the heated pan and cook.
  5. Once one side is brown, flip and cook the other side until done.
  6. Plate and enjoy!

Hello ladies (and gents)!

Over the past few weeks I have come to realize that I need a lotta help with WholeYum.com.  I need help with posting recipes, articles, and there isn’t enough time in the day to accomplish all that I want for the site!  The site is growing, and I want to add a passionate health junkie and food blogger to the team to work with me!  Let’s push this thing to the next level!  I am seeking someone who is health conscious but not crazed, loves to cook, is personable and friendly, loves to write about food, health, and fitness, has an open mind, has photography skills (and a dslr), and a good sense of humor.  Wow, this sounds like a match.com profile… 🙂  I would prefer to work with someone who is interested in growing in this position–maybe a potential partner for the site.

Is there pay?  Yes, you will always get a percentage (half for partners) of the earnings for this site as long as you work this position.  There will be other incentives as well!  Also the larger and faster we grow the more you will ultimately make!  I’m thinking Huffington Post status for 2014!  Are you dreaming with me?
