Mini peanut butter muffins with strawberries

These mini muffins combine the rich, nutty flavor of peanut butter with the sweetness of strawberries. They are perfect for on-the-go snacking or as a bite-sized indulgence.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup creamy peanut butter
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup diced strawberries
  • Optional: additional diced strawberries for topping

Instructions

Preheat your oven to 375°F (190°C). Grease a mini muffin tin or line it with mini muffin liners.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, mix together the melted butter, peanut butter, and milk until well combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Gently fold in the diced strawberries into the muffin batter.

Spoon the batter into the prepared mini muffin tin, filling each cavity about two-thirds full.

If desired, place a few additional diced strawberries on top of each muffin for added flavor and decoration.

Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
